Embark on an 11-day journey through the mystical Andean region of Peru, including the awe-inspiring Machu Picchu. We’re exploring the communities and cultures that gave rise to one of humanity’s most remarkable food systems with world-renowned author and vegan food entrepreneur, Miyoko Schinner. Explore the birthplace of potatoes, quinoa, and countless agricultural innovations that continue to nourish the world today. Together with Miyoko Schinner, we'll learn directly from Indigenous communities, farmers, cooks, weavers, and food stewards who preserve ancestral knowledge passed down through generations. Taste the flavors of cosmopolitan Lima to the dramatic peaks and fertile terraces of the Sacred Valley, before arriving in the enchanting city of Cusco, where Inca foundations create one of South America's most captivating destinations.

DAY 1 | THE ADVENTURE BEGINS IN LIMA

Bienvenidos a Peru! Upon arrival at Lima International Airport, our team will greet you and transfer you to our boutique hotel in one of Lima's most vibrant neighborhoods. Take some time to settle in, relax after your journey, and meet your fellow travelers. This evening, we'll gather for a welcome dinner and begin our exploration of Peru's remarkable food culture. We'll share stories, get to know one another, and enjoy a delicious meal showcasing the creativity and innovation that have made Lima one of the world's most exciting culinary destinations.

DAY 2 | LIMA: A WALKING TOUR OF THE CULINARY CAPITAL OF SOUTH AMERICA

Lima is a city where cultures, ingredients, and traditions collide in the most delicious ways. Influences from tribal Peruvian communities and Japanese, Chinese, African, and European immigrants have shaped a food scene unlike anywhere else in the world. Today we'll dive into the city's rich culinary culture, exploring local markets, vibrant neighborhoods, and some of our favorite plant-based spots on a cultural and walking food tour.

Throughout the day, we'll try tastings at different food stops and discover how modern chefs are reimagining traditional Peruvian cuisine while celebrating native ingredients from the coast, mountains, and Amazon. Between meals, we'll stroll through colorful neighborhoods, learn about Lima's fascinating history, and soak up the energy of this dynamic city.

DAY 3 | THE FEMININE GUARDIANS OF THE EARTH

Today we'll spend time with members of the Shipibo women, whose traditions originate in the Amazon rainforest and continue to inspire artists, healers, and cultural practitioners throughout the country. Through conversations, art, music, and storytelling, we'll gain insight into this matriarchal worldview and the deep connections between art, community, and cultural identity. We’ll spend the morning listening, learning, creating art together and eating fruits from the Amazon.

This experience invites us to reflect on the connections between ecofeminism, environmental stewardship, and the vital role women play in sustaining both culture and biodiversity. In the afternoon, we’ll have a city tour to explore downtown Lima and you have a free evening to get in the last bits of the city.

DAY 4 | FLIGHT TO CUSCO AND ACCLIMATIZE IN THE SACRED VALLEY

Today we leave the coast behind and journey into the mountains. We’ll be spending the next few days acclimatizing to the altitude and experiencing the magic of the Sacred Valley. As we arrive in the afternoon, we’ll be greeted with healing herbal teas and light quinoa soups along with local music as we settle in for the night.

DAY 5 | EXPLORING THE SACRED VALLEY

After breakfast, we'll explore the enchanting village of Ollantaytambo, one of the oldest continuously inhabited Inca towns in Peru. As we wander its narrow stone streets, lively plaza, and artisan market, we'll discover how this remarkable community continues to preserve traditions passed down for centuries while offering opportunities to support local Indigenous artisans.

In the afternoon, we'll visit the Fortress, where towering agricultural terraces and ingenious engineering reveal the Incas' deep understanding of the natural world. Standing high above the Sacred Valley, we'll reflect on how this extraordinary landscape helped shape one of history's most sophisticated agricultural civilizations—knowledge that continues to inspire sustainable food systems today.

DAY 6 | GOOD MORNING, MACHU PICCHU

The early morning wake up call to Machu Picchu will be worth it as we journey up to this sacred mountain via train. We’ll have a guided tour through the citadel crossing terraces, astronomical view points, agricultural wonders, and sacred ritual spaces. Learn about how the Incas were predominantly eating plant-based food and lived in harmony with the mountains and Mother Earth at large. An optional hike is possible for those who want even more impressive views. Lunch will be in town at one of our favorite vegan restaurants in Agua Calientes. Post lunch, you have two hours of free time for a massage, shopping or simply wandering before we take the train back to our hotel.

DAY 7 | MORAY, MARAS SALT MINES & A HIGH ALTITUDE TASTING MENU

Today we'll explore two of the Sacred Valley's most remarkable archaeological and natural wonders and take a vegan gastronomical journey at MIL restaurant (rated one of Latin America’s 50 best restaurants). We'll begin at Moray, the extraordinary circular terraces believed to have served as an Inca agricultural laboratory, where varying elevations created unique microclimates for cultivating and experimenting with crops. We'll then continue to the breathtaking Maras Salt Mines, where thousands of shimmering salt pools have been carefully harvested by local families using traditional methods for centuries. Later today we will begin our tasting menu at Mil where each course will evolve from what the land provides seasonally. Imagine trying some of the Incas most incredible dishes that are being revived by local communities: potato tortillas, botanical drinks like banana passionfruit, airampo cactus fruit, corn husk juice, tarwi bean cakes and cacao pulp. We can’t wait to share these incredible heritage foods with you.

DAY 8: HELLO, BEAUTIFUL CUSCO

After breakfast, we'll participate in a traditional ceremony, an offering of gratitude to Pachamama (Mother Earth), guided by local Andean practitioners. This sacred ritual invites us to honor the reciprocal relationship between humans and the natural world, a philosophy that has long been at the heart of Andean culture and continues to inspire more compassionate and sustainable ways of living. In the evening, we’ll head to the city of Cusco where we’ll be spending the next three nights. Due to the altitude issues, we are going to take it very slow today so that you can acclimatize. Take the second part of the day to walk slowly around town or get a massage. We’ll meet back up for dinner at a wonderful vegan spot in town.

DAY 9: CUSCO COOKING CLASS + CITY TOUR

After breakfast, we’ll meet with a local chef and explore one of Cusco’s bustling markets to pick out our own ingredients. We’ll spend the afternoon slowly cooking together and getting a better understanding of what how recipes differ in Cusco compared to the places we have been so far. After lunch, we’ll take a 3 hour Cusco City tour to visit sites like the Temple of the Sun in the city and marvel at how the Incas built a central vortex to worship the sun. You have the evening free to explore Cusco on your own and hop into the many cute cafes for dinner.

DAY 10: SLOW DAY IN CUSCO, MASSAGES AND GOODBYE DINNER

The morning is yours to take in the last bits of the city whether you want to go shopping for high altitude coffee beans, exploring the San Blas artisan district, or hang out on a rooftop cafe. You could also get a pre-flight massage in! We’ll have an optional hike available for those that are interested in getting some views of the waterfalls and villages of Cusco. This evening, we'll celebrate our journey together with a memorable farewell dinner at one of South America's finest vegan restaurants, sharing stories, laughter, and the friendships we've built along the way.

DAY 11: AIRPORT DROP OFFS

After hotel checkout, catch your domestic flight from Cusco (booked by us) to Lima so that you can fly back to your international destination. You will be dropped off at the Cusco airport for your connecting flight to Lima. The last airport drop off will be at 6 PM.
